  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 2/3 cup water
  • 1 red bell pepper, cut into 1-inch strips (optional)
  • 2 1/2 cups thick and chunky salsa
  • 1 can sweet corn, drained
  • 6 flour tortillas (6-inch for soft tacos & fajitas)
  • 2 cups shredded Colby-Monterey Jack cheese blend

Instructions

Step 1: Preheat your oven to 350°F.

In a 12-inch skillet, cook the ground beef over medium-high heat for 5-7 minutes until fully cooked, stirring occasionally. Drain the excess fat.

Step 2: Add taco seasoning, water, and bell pepper to the beef.

Simmer for 3-4 minutes, stirring frequently, until thickened. Stir in the salsa and corn.

Step 3: Spray a 13×9-inch baking dish with cooking spray.

Cut the tortillas in half and place 6 tortilla halves in the bottom of the dish.

Step 4: Layer half of the beef mixture over the tortillas. Sprinkle 3/4 cup of cheese on top.

Add the remaining tortilla halves, followed by the remaining beef mixture and cheese.

Step 5: Spray a large piece of foil with cooking spray and cover the dish with the sprayed side down.

Bake for 35-40 minutes until heated through and the cheese is melted.
