Beef Taco Casserole
This casserole layers seasoned beef, tortillas, salsa, and gooey cheese, bringing all the flavors of taco night into one hearty dish.
- 1 lb ground beef
- 2 tbsp taco seasoning
- 2/3 cup water
- 1 red bell pepper cut into 1-inch strips (optional)
- 2 1/2 cups thick and chunky salsa
- 1 can sweet corn drained
- 6 flour tortillas 6-inch for soft tacos & fajitas
- 2 cups shredded Colby-Monterey Jack cheese blend
Preheat your oven to 350°F. In a 12-inch skillet, cook the ground beef over medium-high heat for 5-7 minutes until fully cooked, stirring occasionally. Drain the excess fat. Add taco seasoning, water, and bell pepper to the beef. Simmer for 3-4 minutes, stirring frequently, until thickened.
Stir in the salsa and corn.
Spray a 13×9-inch baking dish with cooking spray. Cut the tortillas in half and place 6 tortilla halves in the bottom of the dish. Layer half of the beef mixture over the tortillas. Sprinkle 3/4 cup of cheese on top.
Add the remaining tortilla halves, followed by the remaining beef mixture and cheese.
Spray a large piece of foil with cooking spray and cover the dish with the sprayed side down.
Bake for 35-40 minutes until heated through and the cheese is melted.
