Cheddar, Chive & Zucchini Quick Bread

  • 1 ½ cups shredded zucchini (do not squeeze)
  • 1 ½ cups shredded cheddar cheese
  • ¾ cup sour cream
  • ¼ cup melted butter
  • 2 large eggs
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • Finely chopped fresh parsley (optional)

Instructions

Step 1: Preheat oven to 350°F (180°C). Grease a 9×5-in loaf pan.

Step 2: Mix zucchini, eggs, sour cream, and melted butter in a bowl.

Step 3: In another bowl, whisk flour, baking powder, baking soda, and salt.

Step 4: Combine wet and dry ingredients until just mixed.

Step 5: Pour batter into the loaf pan and spread evenly.

Step 6: Bake for 50–70 min until a toothpick comes out clean, sprinkle with chopped fresh parsley.

Cool slightly, slice, and enjoy.
