Cheddar, Chive & Zucchini Quick Bread

This is the perfect side dish or snack to share with loved ones. Quick to make, even quicker to disappear!

Ingredients
  

  • 1 ½ cups shredded zucchini do not squeeze
  • 1 ½ cups shredded cheddar cheese
  • ¾ cup sour cream
  • ¼ cup melted butter
  • 2 large eggs
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • Finely chopped fresh parsley optional

Instructions
 

  • Preheat oven to 350°F (180°C). Grease a 9×5-in loaf pan.
  • Mix zucchini, eggs, sour cream, and melted butter in a bowl.
  • In another bowl, whisk flour, baking powder, baking soda, and salt.
  • Combine wet and dry ingredients until just mixed. Pour batter into the loaf pan and spread evenly.
  • Bake for 50–70 min until a toothpick comes out clean, sprinkle with chopped fresh parsley. Cool slightly, slice, and enjoy.
