Preheat oven to 350°F (180°C). Grease a 9×5-in loaf pan.
Mix zucchini, eggs, sour cream, and melted butter in a bowl.
In another bowl, whisk flour, baking powder, baking soda, and salt.
Combine wet and dry ingredients until just mixed. Pour batter into the loaf pan and spread evenly.
Bake for 50–70 min until a toothpick comes out clean, sprinkle with chopped fresh parsley. Cool slightly, slice, and enjoy.
