Sweet And Spicy Corn Fritters

Fritters are one of my all-time favorite dishes!

Whether for breakfast, lunch, or a snack, these Spicy Sweet Corn Fritters are delicious and versatile.

Plus, they’re perfect for meal prep and go great with a fresh tomato salsa on the side.

Ingredients

For the fritters:

  • 2 sweet corn cobs
  • 100g flour
  • 2 tsp baking powder
  • 2 eggs
  • 4 tbsp milk (almond milk used)
  • 1 tsp paprika
  • 2 tbsp coriander/cilantro, chopped
  • 1 spring onion, chopped
  • Chili to taste
  • Salt to taste

For the salsa:

  • 2 ripe tomatoes
  • 1 spring onion, chopped
  • 2 tbsp coriander/cilantro, chopped
  • 2 tbsp olive oil
  • Tabasco sauce to taste
  • Salt to taste

Instructions

Step 1: Cut kernels off the corn cobs.

Step 2: In a bowl, mix flour, baking powder, eggs, milk, paprika, coriander, spring onion, chili, and salt.

Step 3: Stir in the corn kernels until combined.

Step 4: Heat oil in a pan and spoon the batter to form fritters; cook until golden on both sides.

Step 5: For the salsa, blitz all salsa ingredients together for a chunky consistency.

Step 6: Serve the fritters hot with the fresh salsa.
