Ingredients
For the fritters:
- 2 sweet corn cobs
- 100g flour
- 2 tsp baking powder
- 2 eggs
- 4 tbsp milk (almond milk used)
- 1 tsp paprika
- 2 tbsp coriander/cilantro, chopped
- 1 spring onion, chopped
- Chili to taste
- Salt to taste
For the salsa:
- 2 ripe tomatoes
- 1 spring onion, chopped
- 2 tbsp coriander/cilantro, chopped
- 2 tbsp olive oil
- Tabasco sauce to taste
- Salt to taste
Instructions
Step 1: Cut kernels off the corn cobs.
Step 2: In a bowl, mix flour, baking powder, eggs, milk, paprika, coriander, spring onion, chili, and salt.
Step 3: Stir in the corn kernels until combined.
Step 4: Heat oil in a pan and spoon the batter to form fritters; cook until golden on both sides.
Step 5: For the salsa, blitz all salsa ingredients together for a chunky consistency.
