Sweet And Spicy Corn Fritters

Whether for breakfast, lunch, or a snack, these Spicy Sweet Corn Fritters are delicious and versatile.

Ingredients
  

For the fritters:

  • 2 sweet corn cobs
  • 100 g flour
  • 2 tsp baking powder
  • 2 eggs
  • 4 tbsp milk
  • 1 tsp paprika
  • 2 tbsp coriander/cilantro chopped
  • 1 spring onion chopped
  • Chili to taste
  • Salt to taste

For the salsa:

  • 2 ripe tomatoes
  • 1 spring onion chopped
  • 2 tbsp coriander/cilantro chopped
  • 2 tbsp olive oil
  • Tabasco sauce to taste
  • Salt to taste

Instructions
 

  • Cut kernels off the corn cobs.
  • In a bowl, mix flour, baking powder, eggs, milk, paprika, coriander, spring onion, chili, and salt.
  • Stir in the corn kernels until combined.
  • Heat oil in a pan and spoon the batter to form fritters; cook until golden on both sides.
  • For the salsa, blitz all salsa ingredients together for a chunky consistency.
  • Serve the fritters hot with the fresh salsa.
