Sweet And Spicy Corn Fritters
Whether for breakfast, lunch, or a snack, these Spicy Sweet Corn Fritters are delicious and versatile. 
For the fritters:
- 2 sweet corn cobs
 - 100 g flour
 - 2 tsp baking powder
 - 2 eggs
 - 4 tbsp milk 
 - 1 tsp paprika
 - 2 tbsp coriander/cilantro chopped
 - 1 spring onion chopped
 - Chili to taste
 - Salt to taste
 
For the salsa:
- 2 ripe tomatoes
 - 1 spring onion chopped
 - 2 tbsp coriander/cilantro chopped
 - 2 tbsp olive oil
 - Tabasco sauce to taste
 - Salt to taste
 
 
Cut kernels off the corn cobs.
In a bowl, mix flour, baking powder, eggs, milk, paprika, coriander, spring onion, chili, and salt.
Stir in the corn kernels until combined.
Heat oil in a pan and spoon the batter to form fritters; cook until golden on both sides.
For the salsa, blitz all salsa ingredients together for a chunky consistency.
Serve the fritters hot with the fresh salsa.
