- 2 chicken breasts (approx. 400 g)
- 1.5 tsp baking soda
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- Broccoli/broccolini, chopped
- 1 white onion, sliced
- Avocado oil (for stir frying)
- Salt & black pepper, to taste
- Udon noodles, cooked
- Sesame seeds, for garnish
For the Teriyaki sauce:
- 1/2 cup soy sauce
- 1/2 cup chicken broth
- 1/4 cup white sugar
- 1/4 cup rice vinegar
- 1-2 garlic cloves, grated
- 1/2 tsp onion powder
- 1 tsp sesame oil
- 1 tsp Sriracha
- 1/4 tsp white pepper
- 1-2 tbsp oyster sauce
Instructions
Step 1: Coat chicken breasts with baking soda and let sit for 15-20 minutes. Rinse with cold water and pat dry.
Step 2: Heat avocado oil in a pan over medium heat. Add the chicken and sauté until browned and cooked through. Remove from the pan and set aside.
Step 3: In the same pan, add more oil if needed and stir fry the sliced green and red bell peppers, broccoli, and white onion until tender.
Step 4: In a small bowl, whisk together the teriyaki sauce ingredients: soy sauce, chicken broth, white sugar, rice vinegar, grated garlic, onion powder, sesame oil, Sriracha, white pepper, and oyster sauce.
