Easy Teriyaki Chicken

Teriyaki Chicken over udon noodles is an all-time favorite for a reason!

   

This dish combines tender chicken, veggies, and a savory homemade teriyaki sauce, over deliciously chewy udon noodles.

Perfect for a quick and satisfying meal!

Ingredients

  • 2 chicken breasts (approx. 400 g)
  • 1.5 tsp baking soda
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • Broccoli/broccolini, chopped
  • 1 white onion, sliced
  • Avocado oil (for stir frying)
  • Salt & black pepper, to taste
  • Udon noodles, cooked
  • Sesame seeds, for garnish

For the Teriyaki sauce:

  • 1/2 cup soy sauce
  • 1/2 cup chicken broth
  • 1/4 cup white sugar
  • 1/4 cup rice vinegar
  • 1-2 garlic cloves, grated
  • 1/2 tsp onion powder
  • 1 tsp sesame oil
  • 1 tsp Sriracha
  • 1/4 tsp white pepper
  • 1-2 tbsp oyster sauce

Instructions

Step 1: Coat chicken breasts with baking soda and let sit for 15-20 minutes. Rinse with cold water and pat dry.

Step 2: Heat avocado oil in a pan over medium heat. Add the chicken and sauté until browned and cooked through. Remove from the pan and set aside.

Step 3: In the same pan, add more oil if needed and stir fry the sliced green and red bell peppers, broccoli, and white onion until tender.

Step 4: In a small bowl, whisk together the teriyaki sauce ingredients: soy sauce, chicken broth, white sugar, rice vinegar, grated garlic, onion powder, sesame oil, Sriracha, white pepper, and oyster sauce.

Step 5: Return the chicken to the pan and pour the teriyaki sauce over the chicken and vegetables. Cook until the sauce thickens and coats the chicken and vegetables.

Step 6: Serve the teriyaki chicken over cooked udon noodles. Garnish with sesame seeds and enjoy!
