Hearty Hamburger Soup

A warm, comforting soup loaded with tender beef, veggies, and rich broth. Perfect for cozy nights!

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, chopped
  • 3 potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 cup green beans (fresh or frozen)
  • 1 tsp Italian seasoning
  • Salt & pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

Step 1: Heat olive oil in a large pot over medium heat. Brown the ground beef, then drain excess fat.

Step 2: Stir in onion & garlic, cooking until softened. Add carrots & cook for 3-4 min.

Step 3: Add potatoes, diced tomatoes & beef broth. Stir in Italian seasoning, salt & pepper.

Step 4: Bring to a boil, then reduce heat & simmer for 20 min.

Step 5: Mix in corn, peas & green beans. Simmer for 10 more min until veggies are tender.

Step 6: Garnish with fresh parsley & serve hot with crusty bread!
