  • 8-10 slices rye bread, cubed (about 4-5 cups)
  • 1/2 cup butter, melted
  • 1 lb corned beef, cut into bite-sized pieces
  • 1 (16 oz) can sauerkraut, drained and rinsed
  • 2 cups shredded Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 2 tbsp chopped fresh parsley (optional)
  • 2 tsp caraway seeds (optional)

Instructions

Step 1: Preheat oven to 350°F. Grease a 9×13 inch baking dish.

Step 2: Toss cubed rye bread with melted butter.

Step 3: Layer half of the bread in the dish, followed by corned beef, sauerkraut, and cheese.

Step 4: Drizzle with dressing, add parsley and caraway seeds if using.

Step 5: Top with remaining bread and cheese.

Step 6: Bake for 30-35 minutes until golden and bubbly. Serve and enjoy!
