Homemade Reuben Bake

Love a good Reuben? Turn that classic sandwich into an irresistible casserole.

Ingredients
  

  • 8-10 slices rye bread cubed (about 4-5 cups)
  • 1/2 cup butter melted
  • 1 lb corned beef cut into bite-sized pieces
  • 1 can sauerkraut (16 oz) drained and rinsed
  • 2 cups shredded Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 2 tbsp chopped fresh parsley optional
  • 2 tsp caraway seeds optional

Instructions
 

  • Preheat oven to 350°F. Grease a 9x13 inch baking dish.
  • Toss cubed rye bread with melted butter.
  • Layer half of the bread in the dish, followed by corned beef, sauerkraut, and cheese.
  • Drizzle with dressing, add parsley and caraway seeds if using.
  • Top with remaining bread and cheese.
  • Bake for 30-35 minutes until golden and bubbly. Serve and enjoy!
