Homemade Reuben Bake
Love a good Reuben? Turn that classic sandwich into an irresistible casserole.
- 8-10 slices rye bread cubed (about 4-5 cups)
- 1/2 cup butter melted
- 1 lb corned beef cut into bite-sized pieces
- 1 can sauerkraut (16 oz) drained and rinsed
- 2 cups shredded Swiss cheese
- 1/2 cup Thousand Island dressing
- 2 tbsp chopped fresh parsley optional
- 2 tsp caraway seeds optional
Preheat oven to 350°F. Grease a 9x13 inch baking dish.
Toss cubed rye bread with melted butter.
Layer half of the bread in the dish, followed by corned beef, sauerkraut, and cheese.
Drizzle with dressing, add parsley and caraway seeds if using.
Top with remaining bread and cheese.
Bake for 30-35 minutes until golden and bubbly. Serve and enjoy!
