Double Pork Baked Beans

Ingredients

  • 1 lb thick-cut bacon
  • 1 small white onion, chopped
  • 2 cups pulled pork
  • 2 cups ketchup
  • 1/4 cup water
  • 1 tsp garlic powder
  • 1/2 tsp ground pepper
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 2 tsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 1 tbsp dark molasses
  • 1/2 tsp Tabasco sauce
  • 2 cans (15 oz each) red kidney beans, drained and rinsed
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed

Instructions

Step 1: Preheat oven to 350°F (175°C).

Step 2: In a bowl, mix ketchup, water, garlic powder, pepper, brown sugar, vinegar, Worcestershire sauce, mustard, molasses, and Tabasco.
Set aside.

Step 3: Cook bacon in a large pot until firm but not crispy.
Remove and chop, leaving the grease.

Step 4: Sauté onions in the bacon grease until translucent.

Step 5: Add pulled pork, beans, sauce, and half the bacon to the pot. Cook for 5 minutes.

Step 6: Transfer to a casserole dish, top with remaining bacon, cover with foil, and bake for 30 minutes.
Uncover and bake for another 20 minutes.
