  • 1 lb chicken breast, cut into equal cubes
  • 1 scallion, chopped
  • 1 tbsp ginger, minced
  • 1/2 tsp salt
  • 1/2 tsp ground white pepper
  • 3 tsp light soy sauce
  • 1 tsp oyster sauce
  • 1 egg
  • 1/4 cup (30g) cornstarch
  • 2g baking powder
  • 3/4 cup (100g) wheat flour
  • Oil for deep frying

Instructions

Step 1: Marinate chicken cubes with scallion, ginger, salt, pepper, soy sauce, oyster sauce, and egg. Mix well.

Step 2: In a separate bowl, mix cornstarch, baking powder, and wheat flour.

Step 3: Coat marinated chicken evenly with the flour mixture.

Step 4: Shake off excess flour, dip chicken in water, and coat with flour mixture again.

Step 5: Heat oil to 180°C (350°F) and deep fry chicken on low heat until golden brown.

Step 6: Drain on paper towels and serve hot. Enjoy!
