  • 1 pound ground beef (or turkey)
  • 1 small onion, chopped
  • 1 red bell pepper, diced
  • 2 cups shredded cheddar cheese
  • 1 (32 oz) bag frozen tater tots
  • 6 large eggs
  • 1 ½ cups milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • Scallion, chopped (for garnish)

Instructions

Step 1: Preheat the oven to 350°F (175°C) and grease a 9×13-inch casserole dish.

Step 2: Heat olive oil in a skillet over medium heat. Sauté the onion and red bell pepper for about 5 minutes until softened.

Add the ground beef and cook until browned, about 6-7 minutes.

Drain excess fat and season with salt and pepper.

Step 3: Spread the cooked beef mixture evenly in the casserole dish.

Sprinkle 1 cup of shredded cheese over the beef, then layer the frozen tater tots on top.

Step 4: In a bowl, whisk together the eggs, milk, garlic powder, paprika, black pepper, and salt.
