Breakfast Tater Tot Casserole

A hearty and cheesy breakfast casserole made with ground beef, eggs, and crispy tater tots—perfect for a crowd!

Ingredients
  

  • 1 pound ground beef or turkey
  • 1 small onion chopped
  • 1 red bell pepper diced
  • 2 cups shredded cheddar cheese
  • 1 bag frozen tater tots 32 oz
  • 6 large eggs
  • 1 ½ cups milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • Scallion, chopped for garnish

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
  • Heat olive oil in a skillet over medium heat. Sauté the onion and red bell pepper for about 5 minutes until softened. Add the ground beef and cook until browned, about 6-7 minutes. Drain excess fat and season with salt and pepper.
  • Spread the cooked beef mixture evenly in the casserole dish. Sprinkle 1 cup of shredded cheese over the beef, then layer the frozen tater tots on top.
  • In a bowl, whisk together the eggs, milk, garlic powder, paprika, black pepper, and salt. Pour evenly over the tater tots.
  • Sprinkle the remaining 1 cup of cheese over the top.
  • Bake for 45-50 minutes, or until the eggs are set and the cheese is melted and bubbly. Garnish with chopped scallion, serve warm, and enjoy!
