Cheesy Garlic Shrimp Grilled Cheese

  • 8 slices thick-cut bread (sourdough or Italian)
  • 2 cups shredded mozzarella
  • 1 cup shredded cheddar
  • 1 lb (450 g) large shrimp, peeled and deveined
  • ½ cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil
  • ½ tsp paprika
  • salt and pepper, to taste
  • ¼ cup grated Parmesan

Instructions

Step 1: Mix butter, garlic, and parsley in a bowl. Set aside.

Step 2: Heat oil in a skillet over medium-high heat. Season shrimp with paprika, salt, and pepper.

Cook for 2-3 mins per side until pink. Remove from heat.

Step 3: Butter one side of each bread slice with the garlic mixture. Sprinkle Parmesan on the buttered side.

Step 4: On the unbuttered side, layer mozzarella, cheddar, shrimp, and more cheese.

Top with another slice of bread, buttered side facing out.

Step 5: Grill sandwiches in a hot skillet for 3-4 mins per side until golden and cheese is melted.

Cover skillet for even melting.

Step 6: Cool slightly before slicing. Serve hot with marinara sauce or a fresh salad.
