  • 4 tbsp olive oil
  • 350g shrimp, peeled and deveined
  • 2 cloves of garlic, minced
  • 1/2 red bell pepper, diced
  • 100g cherry tomatoes, halved
  • 15g butter
  • Fresh parsley, chopped (for garnish)
  • Juice of 1/2 lemon
  • 250g fettuccine
  • 2 ladles of pasta water
  • Salt, to taste
  • Pepper, to taste
  • Smoked paprika, to taste
  • Chili flakes, to taste
  • Grated Gouda (optional, for topping)

Instructions

Step 1: Heat olive oil in a large pan. Add the shrimp, smoked paprika, salt, and minced garlic. Cook until the shrimp turns pink.

Step 2: Add the diced red bell pepper and cook for 2-3 minutes. Add halved cherry tomatoes and cook until they soften.

Step 3: Stir in the chopped parsley, butter, and lemon juice. Let the butter melt and mix well.

Step 4: Add the cooked fettuccine and pasta water to the pan. Stir everything together to combine.

Step 5: Garnish with more chopped parsley and serve with grated Gouda if desired. Serve and enjoy!
