Garlic Butter Shrimp Pasta

This Garlic Butter Shrimp Pasta is super easy to make and doesn’t require any cream!

Ingredients
  

  • 350 g shrimp peeled and deveined
  • 2 cloves of garlic minced
  • 4 tbsp olive oil
  • 1/2 red bell pepper diced
  • 100 g cherry tomatoes halved
  • 15 g butter
  • 250 g fettuccine cooked
  • 2 ladles Pasta water
  • Chopped fresh parsley for garnish
  • Juice of 1/2 lemon
  • Salt to taste
  • Pepper to taste
  • Smoked paprika to taste
  • Chili flakes to taste
  • Grated Gouda optional, for topping

Instructions
 

  • Heat olive oil in a large pan. Add the shrimp, smoked paprika, salt, and minced garlic. Cook until the shrimp turns pink.
  • Add the diced red bell pepper and cook for 2-3 minutes. Add halved cherry tomatoes and cook until they soften.
  • Stir in the chopped parsley, butter, and lemon juice. Let the butter melt and mix well.
  • Add the cooked fettuccine and pasta water to the pan. Stir everything together to combine.
  • Garnish with more chopped parsley and serve with grated Gouda if desired. Serve and enjoy!
