Inspired by a dish I tried in Jordan, this recipe is the perfect comfort food, combining cheesy mashed potatoes with a flavorful chicken mix.

Ingredients
Mashed potato:
- 8 small potatoes, peeled
- 1 cup mozzarella cheese
- 2 tbsp butter
- 2 tsp garlic powder
- 1 tsp vegeta (or chicken bouillon)
- Salt to taste
- 1 1/2 cups breadcrumbs (or enough to make the mashed potatoes mouldable)
Chicken mix:
- 3 small capsicums (red, green, yellow), diced
- 2 small onions, diced
- 2 tbsp vegetable oil
- 500g chicken breast, diced
- 1 can corn kernels, drained
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp Italian herbs
- 1 tsp Moroccan spices
- 1/2 tsp curry powder
- 1 tsp vegeta (or chicken bouillon)
- Salt to taste
- 125g cream cheese
Topping:
- 300 ml thickened cream
- 2 cups mozzarella cheese
Instructions
Step 1: Boil the peeled potatoes until soft. Add mozzarella cheese, butter, garlic powder, vegeta, and salt to taste.
Mash until smooth using a stick blender.
Step 2: Add breadcrumbs to the mashed potatoes and mix well. Set aside.
Step 3: In a saucepan over medium heat, sauté the diced onions in vegetable oil.
Add the diced chicken breast and cook until browned.
Step 4: Stir in the diced capsicums, corn, garlic powder, paprika, Italian herbs, Moroccan spices, curry powder, and vegeta.
Add salt to taste and cream cheese, mixing until well combined.
Step 5: In a baking tray, spread the chicken mix evenly. Form the mashed potatoes into balls and place them on top of the chicken layer.
