Ingredients

Dough:

  • 1 1/4 cups water
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 3 cups all-purpose flour

  • 1/2 small onion, finely chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • Bunch of parsley, chopped
  • 1 tbsp tomato + red pepper paste
  • 1/2 finely chopped tomato
  • 1 tsp paprika
  • 1 tsp red pepper flakes
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil

Additional toppings:

  • Mozzarella cheese
  • Akawai cheese
  • Sujuk (meat sausage)
  • Shishito peppers

For finishing:

  • 1 egg, whisked (for egg wash)
  • Sesame seeds & black seeds (optional)
  • Cornmeal (for dusting)
  • 2-3 tbsp melted butter
  • Fresh parsley (for garnish)

Instructions

Step 1: Make the dough by combining the water, yeast, and sugar. Mix the flour, salt, and olive oil into the yeast mixture.

Knead the dough until smooth. Let it rest for 1 hour.

Step 2: Prepare the meat topping by cooking ground beef with onion, bell peppers, parsley, tomato paste, tomato, and seasonings. Set aside.

Step 3: Preheat your oven to 495°F (or as high as it goes) and heat for at least 1 hour.

Use a thin cutting board dusted with cornmeal for easy transfer of the pide.

Step 4: Roll the dough thin and shape it like a boat.

Add the meat topping or your preferred toppings like mozzarella, Akawai cheese, or sujuk.

Step 5: Brush the edges of the pide with egg wash, sprinkle sesame seeds if desired, and transfer it to the oven.

Bake for 8-14 minutes or until the crust turns golden brown.

Step 6: Once baked, brush with melted butter and garnish with fresh parsley. Serve hot and enjoy!
