If you need a filling breakfast to keep you full for hours, this sausage, egg & cheese Breakfast Burrito is your go-to option!
Ingredients
- 2 hash brown sticks
- 1 chicken sausage
- 2 eggs
- 1 tbsp onion, diced
- 1 tbsp bell pepper, diced
- 1/4 tsp garlic powder
- Salt & pepper to taste
- 2-3 slices cheddar cheese
- 1 large flour tortilla
- Chipotle mayo (or spicy mayo)
- Pickled jalapeños (optional)
Instructions
Step 1: Cook the hash brown sticks in an air fryer until crispy.
Step 2: Slice the chicken sausage in half and whisk the eggs. Fry the sausage until nicely blistered.
Step 3: Sauté the diced bell peppers and onions in a pan, then add the eggs, garlic powder, salt, and pepper. Scramble the eggs until cooked.
Step 4: Add cheddar cheese on top of the scrambled eggs, cover with a lid, and let the cheese melt.
Step 5: Build your burrito by spreading a layer of Chipotle mayo on the tortilla. Add the egg and cheese scramble, sausage, and hash brown sticks.
Step 6: Roll up the burrito and toast it in a pan until golden and crispy on the outside. Enjoy!
