Pesto Chicken & Broccoli Pasta Bake

Ingredients

  • 1 lb pasta of choice
  • 1/3 cup sun-dried tomatoes with oil
  • 1 lb chicken breast
  • 1 tbsp butter
  • 1/2 yellow onion, diced
  • Salt, pepper, paprika, oregano, and Tony’s seasoning, to taste
  • 1 head garlic, minced
  • 2 cups heavy cream
  • 1-2 cups cooked broccoli, to taste
  • 2 handfuls spinach
  • 2 cups shredded parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup pesto
  • Fresh parsley for garnish

Instructions

Step 1: Preheat oven to 350°F.

Cook pasta until al dente; drain and set aside.

Step 2: Heat sun-dried tomato oil in a large oven-safe pan. Cook chicken until done, then chop and set aside.

Step 3: In the same pan, melt butter, add seasonings, sauté onion for 4 minutes, then stir in garlic.

Step 4: Add heavy cream, simmer, then mix in 1 cup parmesan and 1 cup mozzarella until melted.

Step 5: Stir in sun-dried tomatoes, broccoli, spinach, and pesto.

Step 6: Top with remaining cheese, bake for 15 minutes, then broil for 5 minutes until golden.

Garnish with parsley. Serve and enjoy!
