Cauliflower Steaks

Ingredients

  • 1 medium head of cauliflower
  • Olive oil spray
  • 1 tsp sea salt, divided
  • 1 tsp paprika, divided
  • 1 tsp za’atar, divided

Tahini sauce

  • 1 large clove garlic
  • 1 tsp salt
  • 1/2 cup tahini
  • 1/3 cup lemon juice
  • 1/4 cup water

Instructions

Step 1: Preheat oven to 425°F and line a baking sheet with parchment paper. Spray with olive oil.

Step 2: Wash cauliflower, trim the bottom, but keep the core. Slice into ¾-inch steaks, roasting any florets that fall apart.

Step 3: Lay the steaks and florets on the baking sheet. Spray tops with olive oil and sprinkle with half the seasonings.

Step 4: Bake for 15 minutes, then remove and carefully turn the steaks. Spray with oil and add remaining spices.

Step 5: Return to the oven and bake for another 10-15 minutes until browned and tender.

Step 6: For the tahini sauce, mash garlic with salt, then whisk in tahini, lemon juice, and water until thick.
