2 Lbs Pork butt or shoulder roast, cubed

3 Cups Potatoes, diced

1/4 Cup Flour

2-3 Cups Chicken stock Or water

2 Tbsp Shortening or lard

1/2 Tsp Garlic powder

2 Large Onions, chopped

1 Tsp Salt

2 cups Hatch Green Chiles roasted and coarsely chopped

¼ c. Pickled Jalapenos drained and chopped

1 Cup Tomatoes, chopped (optional)

Instructions:

Dredge the meat in flour. Place the shortening in a heavy pot and brown meat at medium heat.

Add the onions and sauté the onions in the remaining shortening .

Add all remaining ingredients to stewing pot except the potatoes. Simmer at low heat for 1 hour to 1 1/2 hour or until the pork is tender. Then, add the potatoes and cook until the potatoes are done!

Serve with heated flour tortillas and Enjoy!
