Turmeric Ginger Pickled Cauliflower is a crunchy golden refrigerator pickle made with cauliflower, ginger, turmeric, garlic, and vinegar.

Ingredients
  

  • 1 large cauliflower head
  • 3 garlic cloves
  • 1 tbsp fresh ginger, sliced
  • 1 tsp turmeric powder
  • 1 1/2 cups white vinegar
  • 1 cup water
  • 1 tbsp salt
  • 1 tbsp sugar
  • 1 tsp mustard seeds

Instructions
 

  • Wash the cauliflower thoroughly, remove the leaves, and cut the head into small bite-sized florets.
  • Bring a pot of water to a boil, blanch the cauliflower for about one minute, then transfer it immediately into cold water to maintain its crunch.
  • Place garlic, ginger slices, turmeric, and mustard seeds into clean glass jars.
  • Pack the cauliflower florets into the jars, leaving enough room for the brine to circulate around each piece.
  • Heat vinegar, water, salt, and sugar together until the ingredients dissolve into a smooth pickling liquid.
  • Pour the warm golden brine over the cauliflower until all florets are covered.
  • Cool the jars completely, refrigerate, and wait at least one day before enjoying the full turmeric and ginger flavor.
