Ingredients
  

  • 4 medium apples
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1/3 cup sugar
  • 1 cinnamon stick
  • 1 tsp whole cloves
  • 1 tsp salt
  • 1 tsp black peppercorns
  • 1 tbsp lemon juice

Instructions
 

  • Wash the apples thoroughly, remove the cores, and slice them into thin wedges or rounds depending on your preferred serving style.
  • Toss the apple slices gently with lemon juice to help prevent browning while preparing the pickling liquid.
  • Place cinnamon stick, cloves, peppercorns, and salt into clean glass jars before adding the prepared apple slices.
  • Combine apple cider vinegar, water, and sugar in a saucepan, then warm gently until the sugar dissolves completely.
  • Pour the warm spiced brine over the apples, making sure the fruit pieces are fully covered by the liquid.
  • Allow the jars to cool slightly before sealing them and transferring them into the refrigerator.
  • Let the apples rest overnight before serving, allowing the cinnamon and vinegar flavors to blend while keeping the fruit crisp.
