Stuffed Zucchini Boats
A low-carb delight, filled with a savory sausage mixture, topped with melty cheese, and baked to perfection.
- 2 medium zucchini
- 1 tsp olive oil
- 1 lb hot Italian sausage
- 4 garlic cloves minced
- 1/2 yellow onion minced
- 2 cups chopped tomatoes or 1 1/2 cups tomato sauce
- 1 tsp Italian seasoning
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 1/2 cups mozzarella cheese shredded
- 2 tbsp fresh basil plus more for garnish
Heat olive oil in a saucepan, brown the sausage, then add garlic and Italian seasoning.
Add tomatoes or sauce and basil, simmer for 20 minutes (5-10 if using sauce). Halve zucchini, scoop out seeds to make boats, and salt to remove moisture.
Place zucchini in a casserole dish, season, and add a sprinkle of mozzarella.
Fill with meat sauce, top with cheese, and bake at 350°F for 30-35 minutes.
Broil to brown cheese, serve hot and enjoy!
