Stuffed Zucchini Boats

A low-carb delight, filled with a savory sausage mixture, topped with melty cheese, and baked to perfection.

Ingredients
  

  • 2 medium zucchini
  • 1 tsp olive oil
  • 1 lb hot Italian sausage
  • 4 garlic cloves minced
  • 1/2 yellow onion minced
  • 2 cups chopped tomatoes or 1 1/2 cups tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 1/2 cups mozzarella cheese shredded
  • 2 tbsp fresh basil plus more for garnish

Instructions
 

  • Heat olive oil in a saucepan, brown the sausage, then add garlic and Italian seasoning.
  • Add tomatoes or sauce and basil, simmer for 20 minutes
    (5-10 if using sauce).
  • Halve zucchini, scoop out seeds to make boats, and salt to remove moisture.
  • Place zucchini in a casserole dish, season, and add a sprinkle of mozzarella.
  • Fill with meat sauce, top with cheese, and bake at 350°F for 30-35 minutes.
  • Broil to brown cheese, serve hot and enjoy!
