Slow Cooker Chicken Cacciatore
Slow Cooker Chicken Cacciatore is a classic Italian inspired dish made with tender chicken, bell peppers, tomatoes, and herbs, slowly cooked into a rich, savory sauce perfect for busy family dinners.
- 2 lbs chicken thighs bone in or boneless
- 1 tablespoon olive oil
- 1 onion sliced
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 3 cloves garlic minced
- 1 can crushed tomatoes 28 oz
- ½ cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon dried thyme
- ½ teaspoon red pepper flakes optional
- Salt and black pepper to taste
- Fresh parsley or basil for garnish
Brown chicken thighs in olive oil over medium heat for 2–3 minutes per side, then transfer to the slow cooker.
Add onion, bell peppers, and garlic evenly over the chicken.
Pour in crushed tomatoes and chicken broth.
Season with oregano, basil, thyme, red pepper flakes if using, salt, and black pepper.
Cook covered on LOW for 6–7 hours or HIGH for 3–4 hours until tender.
