Slow Cooker Chicken Cacciatore

Slow Cooker Chicken Cacciatore is a classic Italian inspired dish made with tender chicken, bell peppers, tomatoes, and herbs, slowly cooked into a rich, savory sauce perfect for busy family dinners.

Ingredients
  

  • 2 lbs chicken thighs bone in or boneless
  • 1 tablespoon olive oil
  • 1 onion sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 3 cloves garlic minced
  • 1 can crushed tomatoes 28 oz
  • ½ cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish

Instructions
 

  • Brown chicken thighs in olive oil over medium heat for 2–3 minutes per side, then transfer to the slow cooker.
  • Add onion, bell peppers, and garlic evenly over the chicken.
  • Pour in crushed tomatoes and chicken broth.
  • Season with oregano, basil, thyme, red pepper flakes if using, salt, and black pepper.
  • Cook covered on LOW for 6–7 hours or HIGH for 3–4 hours until tender.
  • Adjust seasoning, garnish with fresh herbs, and serve hot.
