Ingredients
  

  • 2 bunches radishes
  • 2 garlic cloves
  • 1 cup white vinegar
  • 1 cup water
  • 1 tbsp sugar
  • 1 tbsp salt
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds

Instructions
 

  • Wash the radishes carefully, remove the tops and roots, then slice them into thin rounds using a sharp knife or mandoline.
  • Pack the radish slices into a clean glass jar, arranging them evenly so the brine can move freely around each piece.
  • Add garlic cloves, peppercorns, and mustard seeds directly into the jar with the radishes.
  • Heat vinegar, water, sugar, and salt in a saucepan until the sugar and salt completely dissolve.
  • Pour the warm brine into the jar, covering all radish slices beneath the liquid.
  • Allow the jar to cool for several minutes before sealing and transferring it to the refrigerator.
  • Enjoy after a few hours for a mild pickle flavor, or wait overnight for a deeper tangy taste and brighter color.
