Ingredients

  • 2 cups peeled garlic cloves
  • 1 cup white vinegar
  • 1 cup water
  • 1 tbsp salt
  • 1 tbsp sugar
  • 1 tsp black peppercorns
  • 2 bay leaves
  • 1 tsp dried oregano

Instructions

  • Peel the garlic cloves carefully and remove any damaged pieces to ensure a clean and consistent pickle.
  • Place the garlic cloves into a saucepan of boiling water and simmer briefly for about one minute to soften their sharp flavor slightly.
  • Drain the garlic and transfer the cloves into a clean glass jar with peppercorns, bay leaves, and oregano.
  • Combine vinegar, water, salt, and sugar in a saucepan, then warm gently until the seasoning dissolves.
  • Pour the prepared brine over the garlic cloves until they are completely submerged.
  • Allow the jar to cool before sealing tightly and placing it in the refrigerator.
  • Wait at least five days before eating so the garlic develops a smoother texture and a balanced tangy flavor.
