- 2 cups peeled garlic cloves
- 1 cup white vinegar
- 1 cup water
- 1 tbsp salt
- 1 tbsp sugar
- 1 tsp black peppercorns
- 2 bay leaves
- 1 tsp dried oregano
Peel the garlic cloves carefully and remove any damaged pieces to ensure a clean and consistent pickle.
Place the garlic cloves into a saucepan of boiling water and simmer briefly for about one minute to soften their sharp flavor slightly.
Drain the garlic and transfer the cloves into a clean glass jar with peppercorns, bay leaves, and oregano.
Combine vinegar, water, salt, and sugar in a saucepan, then warm gently until the seasoning dissolves.
Pour the prepared brine over the garlic cloves until they are completely submerged.
Allow the jar to cool before sealing tightly and placing it in the refrigerator.
Wait at least five days before eating so the garlic develops a smoother texture and a balanced tangy flavor.
