Pickled Cherry Tomato Bites are juicy refrigerator pickles made with fresh tomatoes, garlic, herbs, and a flavorful vinegar brine.

- 2 pounds cherry tomatoes
- 3 garlic cloves
- 2 tbsp fresh basil
- 1 cup white vinegar
- 1 cup water
- 1 tbsp salt
- 1 tbsp sugar
- 1 ttsp black peppercorns
- 1 tsp dried oregano
Wash the cherry tomatoes carefully and pierce each one once or twice with a toothpick to help the flavors penetrate.
Place garlic cloves, basil leaves, peppercorns, and oregano into a clean glass jar.
Add the cherry tomatoes gently, filling the jar while leaving enough room for the pickling liquid.
Heat vinegar, water, salt, and sugar in a small saucepan until the salt and sugar dissolve completely.
Pour the warm brine over the tomatoes until they are fully covered.
Allow the jar to cool slightly before sealing and placing it in the refrigerator.
Let the tomatoes pickle overnight before serving, then enjoy them chilled as a snack or flavorful topping.
