Heat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Lightly flour a surface, roll out thawed puff pastry to smooth and slightly enlarge.
Mix spinach, Parmesan, mozzarella, garlic powder, onion powder, salt, and pepper until combined.
Spread filling on half the pastry, fold over, press to seal, and cut into 1-inch strips.
Twist each strip and place on baking sheet with space between.
Brush twists with beaten egg.
Bake 15–20 minutes until puffed, golden, and crisp.
Cool for 3–4 minutes and serve warm.
