Ingredients

  • 2 pounds cucumbers
  • 1/2 cup honey
  • 1 cup white vinegar
  • 1 cup water
  • 1 tbsp salt
  • 2 tbsp yellow mustard seeds
  • 2 garlic cloves
  • Fresh dill

Instructions

  • Wash the cucumbers thoroughly and slice them into rounds or spears depending on your preferred serving style.
  • Place garlic cloves, fresh dill, and mustard seeds into clean jars before adding the cucumber pieces.
  • Pack the cucumbers tightly into the jars while leaving enough space for the honey mustard brine.
  • Combine vinegar, water, honey, and salt in a saucepan and warm gently until the honey blends completely into the liquid.
  • Pour the prepared brine over the cucumbers, making sure every piece is fully submerged.
  • Let the jars cool slightly, then cover tightly and place them in the refrigerator.
  • Allow the cucumbers to pickle overnight before tasting, then continue chilling for stronger flavor over the following days.
