Easy Apple Pie Enchiladas
Apple Pie Enchiladas are a sweet, oven baked dessert made with soft tortillas filled with spiced apple pie filling and topped with a rich buttery sauce that caramelizes into a golden, pastry like texture.
- 1 can 21 ounce apple pie filling
- 1 teaspoon ground cinnamon
- ½ cup butter
- ½ cup white sugar
- ½ cup brown sugar
- ½ cup water
- 1 teaspoon vanilla
- 6 flour tortillas 8 inch
Fill tortillas with apple filling and cinnamon, roll tight, place seam side down.
Cook butter, sugars, and water until melted, boil then simmer 3 minutes, stir in vanilla.
Pour sauce over tortillas, let rest 45 minutes.
Bake at 350°F or 175°C for 30 minutes until golden and bubbly.
Rest briefly, serve warm.
