- small cabbage head, shredded
- 2 carrots, shredded
- 1 small red onion, thinly sliced
- 1 cup white vinegar
- 1 cup water
- 2 tbsp sugar
- 1 tbsp salt
- 1 tsp celery seeds
- 1 tsp mustard seeds
Wash and shred the cabbage finely, then combine it with shredded carrots and sliced red onion in a large mixing bowl.
Sprinkle the vegetables lightly with salt and massage gently for a minute to help release some moisture and improve the texture.
Pack the cabbage mixture into clean glass jars or a large airtight container, pressing gently so it settles evenly.
Combine vinegar, water, sugar, celery seeds, and mustard seeds in a saucepan and heat until the sugar and salt dissolve.
Pour the warm brine over the cabbage mixture, making sure the vegetables are evenly coated.
Allow the container to cool slightly before covering and transferring it to the refrigerator.
Let the slaw rest overnight before serving, then use it as a crunchy topping or refreshing side dish.
