- 2 pounds carrots
- 3 garlic cloves
- 2 cups water
- 1 cup rice vinegar
- 1 tbsp salt
- 1 tbsp sugar
- 1 tsp coriander seeds
- 2 tbsp fresh dill
Peel the carrots and cut them into evenly sized sticks or thin slices depending on your preferred texture.
Place garlic cloves, coriander seeds, and dill into clean glass jars before adding the prepared carrots.
Pack the carrots firmly into the jars while leaving enough space for the pickling liquid to flow around them.
Combine water, rice vinegar, salt, and sugar in a saucepan and warm gently until the salt and sugar dissolve.
Pour the brine over the carrots until they are completely submerged beneath the liquid.
Allow the jars to cool naturally before sealing and moving them into the refrigerator.
Let the carrots pickle for at least one day before eating, then enjoy them chilled as a crunchy snack or side dish.
