  • 3 garlic cloves

  • 1 cup rice vinegar
  • 1 tbsp salt
  • 1 tbsp sugar
  • 1 tsp coriander seeds
  • 2 tbsp fresh dill

Instructions

  • Peel the carrots and cut them into evenly sized sticks or thin slices depending on your preferred texture.
  • Place garlic cloves, coriander seeds, and dill into clean glass jars before adding the prepared carrots.
  • Pack the carrots firmly into the jars while leaving enough space for the pickling liquid to flow around them.
  • Combine water, rice vinegar, salt, and sugar in a saucepan and warm gently until the salt and sugar dissolve.
  • Pour the brine over the carrots until they are completely submerged beneath the liquid.
  • Allow the jars to cool naturally before sealing and moving them into the refrigerator.
  • Let the carrots pickle for at least one day before eating, then enjoy them chilled as a crunchy snack or side dish.
