Creamy One Pot Gnocchi Chicken Pot Pie

One Pot Gnocchi Chicken Pot Pie is a creamy, comforting dish made with tender chicken, soft gnocchi, and vegetables, all simmered together in a rich, savory sauce.

Ingredients
  

  • 4 Tablespoons butter or vegan butter
  • 1 cup sliced carrots
  • 4 oz mushrooms sliced
  • 1 large or 2 small celery stalks thinly sliced
  • 1 large shallot or small onion chopped
  • Salt and pepper
  • 2 cloves garlic minced
  • 1 teaspoon poultry seasoning
  • Pinch dried thyme
  • 3 Tablespoons gluten-free flour
  • 2 cups chicken stock or broth
  • 1 cup milk
  • 12 oz gnocchi
  • 1 ½ cups shredded cooked chicken
  • ½ cup frozen peas

Instructions
 

  • Cook vegetables in butter over medium-high heat for 6–7 minutes until softened; season.
  • Add garlic, poultry seasoning, and thyme; cook 1–2 minutes.
  • Stir in flour and cook briefly.
  • Gradually add broth and milk, stirring until smooth and lightly bubbling.
  • Add gnocchi and simmer 5–6 minutes until tender.
  • Stir in chicken and peas, heat through, then serve warm.
