One Pot Gnocchi Chicken Pot Pie is a creamy, comforting dish made with tender chicken, soft gnocchi, and vegetables, all simmered together in a rich, savory sauce.
- 4 Tablespoons butter or vegan butter
- 1 cup sliced carrots
- 4 oz mushrooms sliced
- 1 large or 2 small celery stalks thinly sliced
- 1 large shallot or small onion chopped
- Salt and pepper
- 2 cloves garlic minced
- 1 teaspoon poultry seasoning
- Pinch dried thyme
- 3 Tablespoons gluten-free flour
- 2 cups chicken stock or broth
- 1 cup milk
- 12 oz gnocchi
- 1 ½ cups shredded cooked chicken
- ½ cup frozen peas
Cook vegetables in butter over medium-high heat for 6–7 minutes until softened; season.
Add garlic, poultry seasoning, and thyme; cook 1–2 minutes.
Stir in flour and cook briefly.
Gradually add broth and milk, stirring until smooth and lightly bubbling.
Add gnocchi and simmer 5–6 minutes until tender.
