Creamy Cottage Cheese Cherry Shortcake Bowls

Cottage Cheese Cherry Shortcake Bowls are soft baked high protein dessert bowls made with cottage cheese, eggs, honey, vanilla, and cherries. Golden on top with a creamy center, they make a simple and cozy family dessert.

Ingredients
  

  • 1 cup cottage cheese
  • 2 eggs
  • 2 tablespoons honey
  • ½ teaspoon vanilla
  • ½ cup cherries
  • Pinch of salt

Instructions
 

  • Preheat the oven to 375°F and lightly grease small oven safe bowls or ramekins.
  • Blend the cottage cheese, eggs, honey, vanilla, and salt until smooth.
  • Spoon the mixture evenly into the prepared bowls.
  • Add cherries to the center of each bowl.
  • Bake for 25 to 30 minutes until lightly golden and mostly set.
  • Let the bowls cool for 5 minutes before serving.
  • Top with extra cherries, honey, or whipped cream if desired.
  • Serve warm while the centers are still soft and creamy.
