Cottage Cheese Egg Bites
These Cottage Cheese Egg Bites are a protein-packed, flavorful treat made with a blend of eggs, cottage cheese, veggies, and spices. Light, fluffy, and incredibly versatile, they are perfect for breakfast, snacks, or meal prep.
- 4 large eggs
- ½ cup cottage cheese
- ¼ cup shredded cheddar cheese or cheese of choice
- ¼ cup diced bell peppers
- ¼ cup chopped spinach
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
Set your oven to 350°F (175°C) and lightly grease a muffin tin.
In a blender, combine eggs and cottage cheese. Blend until smooth and frothy, about 20 seconds.
Pour the mixture into a bowl and stir in cheese, bell peppers, spinach, salt, pepper, and garlic powder. Mix well.
Divide the mixture evenly among the muffin cups, filling each about ¾ full.
Bake in the preheated oven for 20-25 minutes, or until set and lightly golden on top. Use a toothpick to check doneness—it should come out clean.
Let the egg bites cool for 5 minutes in the tin before removing. Serve warm or let cool completely for later.
