Ingredients
  

  • 3 pounds fresh beets
  • 1 1/2 cups white vinegar
  • 1 cup water
  • 1/2 cup sugar
  • 1 tbsp salt
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 tsp black peppercorns

Instructions
 

  • Wash the beets thoroughly, trim the tops and roots, and cook them until tender using boiling or steaming.
  • Allow the cooked beets to cool enough to handle, then peel away the skins and slice them into even rounds.
  • Divide cinnamon, cloves, and peppercorns between clean jars before adding the beet slices.
  • Combine vinegar, water, sugar, and salt in a saucepan and heat until the sugar dissolves completely.
  • Pour the warm brine over the beet slices, ensuring they are fully submerged beneath the liquid.
  • Let the jars cool at room temperature before sealing them and placing them into the refrigerator.
  • Chill for at least one day before serving, allowing the beets to develop their signature sweet and tangy flavor.
