Cheesy Spinach Stuffed Pastry

This Cheesy Spinach Stuffed Pastry is a veggie twist on mini sausage rolls, with flaky pastry and an ooey-gooey cheese filling.

Ingredients
  

  • 2 sheets puff pastry thawed
  • 2 cups fresh spinach chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg beaten (for egg wash)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet.
  • Heat olive oil in a skillet. Cook spinach for 2-3 minutes, then let it cool.
  • Mix spinach with ricotta, Parmesan, garlic powder, salt, and pepper.
  • Roll out puff pastry and cut into 8 squares. Add spinach mix to each square, fold, and seal edges with a fork.
  • Place on baking sheet, brush with beaten egg.
  • Bake for 15-20 minutes until golden. Cool slightly and enjoy!
