Preheat oven to 400°F (200°C) and line a baking sheet.
Heat olive oil in a skillet. Cook spinach for 2-3 minutes, then let it cool.
Mix spinach with ricotta, Parmesan, garlic powder, salt, and pepper.
Roll out puff pastry and cut into 8 squares. Add spinach mix to each square, fold, and seal edges with a fork.
Place on baking sheet, brush with beaten egg.
Bake for 15-20 minutes until golden. Cool slightly and enjoy!
