Asian Style Cucumber Pickles

Asian Style Cucumber Pickles are crunchy refrigerator pickles made with cucumbers, sesame, garlic, ginger, and a sweet tangy dressing.

Ingredients
  

  • 4 Persian cucumbers
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/3 cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 1 tsp chili flakes
  • 1 tbsp sesame seeds

Instructions
 

  • Wash the cucumbers and gently crush them with the side of a knife before cutting them into bite-sized pieces.
  • Place the cucumber pieces into a bowl and sprinkle lightly with salt, allowing them to sit for 10 minutes to release extra moisture.
  • Drain the cucumbers and pat them dry before transferring them into a clean container.
  • Whisk rice vinegar, soy sauce, sesame oil, sugar, garlic, ginger, and chili flakes until the dressing is well combined.
  • Pour the marinade over the cucumbers and toss gently until every piece is coated evenly.
  • Sprinkle sesame seeds over the top and cover the container before placing it in the refrigerator.
  • Chill for at least 2 hours before serving, allowing the cucumbers to absorb the full flavor of the Asian-inspired marinade.
