Asian Style Cucumber Pickles are crunchy refrigerator pickles made with cucumbers, sesame, garlic, ginger, and a sweet tangy dressing.

- 4 Persian cucumbers
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1/3 cup rice vinegar
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp sugar
- 1 tsp chili flakes
- 1 tbsp sesame seeds
Wash the cucumbers and gently crush them with the side of a knife before cutting them into bite-sized pieces.
Place the cucumber pieces into a bowl and sprinkle lightly with salt, allowing them to sit for 10 minutes to release extra moisture.
Drain the cucumbers and pat them dry before transferring them into a clean container.
Whisk rice vinegar, soy sauce, sesame oil, sugar, garlic, ginger, and chili flakes until the dressing is well combined.
Pour the marinade over the cucumbers and toss gently until every piece is coated evenly.
Sprinkle sesame seeds over the top and cover the container before placing it in the refrigerator.
Chill for at least 2 hours before serving, allowing the cucumbers to absorb the full flavor of the Asian-inspired marinade.
