Zesty Lemon Blueberry Cottage Cheese Protein Bites

Soft, lightly sweet protein bites packed with lemon zest, juicy blueberries, and creamy cottage cheese, baked into a nourishing and satisfying snack.

Ingredients
  

  • 1 cup cottage cheese
  • 1 cup almond flour
  • ¼ cup honey or low carb sweetener
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup blueberries

Instructions
 

  • Preheat oven to 350°F and line a baking sheet with parchment paper
  • Blend cottage cheese until smooth and creamy
  • Mix cottage cheese, honey, lemon zest, lemon juice, and vanilla until smooth
  • Add almond flour, baking powder, and salt, mixing into a soft dough (add more flour if too wet)
  • Gently fold in blueberries without crushing them
  • Scoop and roll into small balls, placing evenly on the baking sheet
  • Bake for 12 to 15 minutes until set and lightly golden
  • Let cool before serving so they firm up
