- 1 cup cottage cheese
- 1 cup almond flour
- ¼ cup honey or low carb sweetener
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- ½ teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup blueberries
Preheat oven to 350°F and line a baking sheet with parchment paper
Blend cottage cheese until smooth and creamy
Mix cottage cheese, honey, lemon zest, lemon juice, and vanilla until smooth
Add almond flour, baking powder, and salt, mixing into a soft dough (add more flour if too wet)
