Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken is a juicy, oven-baked dish packed with sweet peppers, spinach, and melty cheese—simple yet elegant.
- 4 skinless chicken breasts
- 1 cup roasted red peppers sliced
- 1 cup fresh spinach leaves
- 1 cup shredded mozzarella cheese
- 2 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Preheat oven to 375°F (190°C) and grease a baking dish.
Cut a deep pocket into each chicken breast without cutting through.
Fill each with spinach, roasted peppers, and mozzarella. Secure with toothpicks.
Mix olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush over chicken.
Place in dish and bake 25–30 minutes, until cooked through (165°F).
Let rest 5 minutes. Remove toothpicks and serve warm.
