Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken is a juicy, oven-baked dish packed with sweet peppers, spinach, and melty cheese—simple yet elegant.

Ingredients
  

  • 4 skinless chicken breasts
  • 1  cup roasted red peppers sliced
  • 1  cup fresh spinach leaves
  • 1  cup shredded mozzarella cheese
  • 2  Tbsp olive oil
  • 1  tsp garlic powder
  • 1  tsp Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a baking dish.
  • Cut a deep pocket into each chicken breast without cutting through.
  • Fill each with spinach, roasted peppers, and mozzarella. Secure with toothpicks.
  • Mix olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush over chicken.
  • Place in dish and bake 25–30 minutes, until cooked through (165°F).
  • Let rest 5 minutes. Remove toothpicks and serve warm.
