Warm & Sweet Blackberry Cobbler

This Warm & Sweet Blackberry Cobbler is a simple yet delightful dessert, combining the natural sweetness of fresh blackberries with a buttery, cinnamon-spiced topping. It’s easy to make, comforting, and perfect for sharing with loved ones.

Ingredients
  

For the Blackberry Filling:

  • 6 cups fresh blackberries about 1½-2 pounds, or frozen blackberries (no need to thaw)
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest optional
  • ½ teaspoon vanilla extract
  • Pinch of salt

For the Cobbler Topping:

  • cups all-purpose flour
  • cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 6 tablespoons cold unsalted butter cut into small pieces
  • ¾ cup cold buttermilk or heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon coarse sugar for sprinkling optional

Instructions
 

  • Preheat the Oven: Heat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Prepare the Filling: Toss blackberries with sugar, cornstarch, lemon juice, zest, vanilla, and salt. Let sit for 10–15 minutes, then spread into the dish.
  • Make the Topping: Combine dry ingredients, cut in cold butter until crumbly, then mix in buttermilk and vanilla until a thick batter forms.
  • Assemble and Bake: Spoon topping over the filling, sprinkle coarse sugar if desired, and bake for 35–40 minutes until golden and bubbly.
  • Cool and Serve: Let cool 15–20 minutes before serving warm with ice cream or whipped cream.
