Cottage Cheese Pecan Pie Mug Cake is a warm single serving dessert made with cottage cheese, almond flour, maple syrup, and toasted pecans. It cooks quickly into a soft cake with the flavor of pecan pie and a lightly nutty texture.

Ingredients
  

  • ¼ cup full fat cottage cheese
  • 1 large egg
  • 1 tablespoon melted butter
  • 1 tablespoon packed brown sugar
  • 1 tablespoon real maple syrup
  • 3 tablespoons almond flour
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon baking powder
  • 2 tablespoons chopped toasted pecans

Instructions
 

  • Whisk cottage cheese and egg in a microwave safe mug until mostly smooth.
  • Add melted butter, brown sugar, maple syrup, and vanilla, then mix until smooth.
  • Stir in almond flour and baking powder, then fold in half of the toasted pecans.
  • Microwave on high for 60 to 75 seconds until the center looks set.
  • Sprinkle remaining pecans on top and cool 1 to 2 minutes before eating.
