Cottage Cheese Pecan Pie Mug Cake is a warm single serving dessert made with cottage cheese, almond flour, maple syrup, and toasted pecans. It cooks quickly into a soft cake with the flavor of pecan pie and a lightly nutty texture.
- ¼ cup full fat cottage cheese
- 1 large egg
- 1 tablespoon melted butter
- 1 tablespoon packed brown sugar
- 1 tablespoon real maple syrup
- 3 tablespoons almond flour
- ¼ teaspoon vanilla extract
- ¼ teaspoon baking powder
- 2 tablespoons chopped toasted pecans
Whisk cottage cheese and egg in a microwave safe mug until mostly smooth.
Add melted butter, brown sugar, maple syrup, and vanilla, then mix until smooth.
Stir in almond flour and baking powder, then fold in half of the toasted pecans.
Microwave on high for 60 to 75 seconds until the center looks set.
Sprinkle remaining pecans on top and cool 1 to 2 minutes before eating.
