Warm Apple Pie Enchiladas

Apple Pie Enchiladas are a simple baked dessert made with soft tortillas filled with sweet apple pie filling, covered in a buttery cinnamon sauce, and baked until golden and caramelized.

Ingredients
  

  • 1 21 ounce can apple pie filling
  • 1 teaspoon ground cinnamon
  • ½ cup butter
  • ½ cup white sugar
  • ½ cup brown sugar
  • ½ cup water
  • 1 teaspoon vanilla
  • 6 8 inch flour tortillas

Instructions
 

  • Fill tortillas with apple filling, sprinkle cinnamon, roll and place seam down.
  • Cook butter, sugars, and water until melted and boiling.
  • Simmer 3 minutes, remove heat, stir in vanilla.
  • Pour sauce over, let rest 45 minutes.
  • Bake at 350°F for 30 minutes until golden.
  • Cool slightly and serve warm.
