Warm Apple Pie Enchiladas
Apple Pie Enchiladas are a simple baked dessert made with soft tortillas filled with sweet apple pie filling, covered in a buttery cinnamon sauce, and baked until golden and caramelized.
- 1 21 ounce can apple pie filling
- 1 teaspoon ground cinnamon
- ½ cup butter
- ½ cup white sugar
- ½ cup brown sugar
- ½ cup water
- 1 teaspoon vanilla
- 6 8 inch flour tortillas
Fill tortillas with apple filling, sprinkle cinnamon, roll and place seam down.
Cook butter, sugars, and water until melted and boiling.
Simmer 3 minutes, remove heat, stir in vanilla.
Pour sauce over, let rest 45 minutes.
Bake at 350°F for 30 minutes until golden.
Cool slightly and serve warm.
