- 1 cup full-fat cottage cheese
- 1 cup pure pumpkin puree
- 2 large eggs
- ⅓ cup maple syrup
- 2 tbsp almond flour
- 1½ tsp pumpkin pie spice
- 1 tsp vanilla extract
- ½ tsp baking powder
- Pinch of salt
Preheat oven to 350°F (175°C) and grease a dish; blend cottage cheese, pumpkin, eggs, and maple syrup until smooth.
Add almond flour, pumpkin spice, vanilla, baking powder, and salt; mix until combined.
