Vegan Snowball Cookies

Soft, sweet, and perfect for the holiday season, these cookies will just melt in your mouth!

Ingredients
  

For the cookies:

  • 1/2 cup vegan butter room temperature
  • 1/2 cup powdered sugar
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla bean paste or vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup chopped pecans
  • 1/4 tsp salt

For rolling:

  • 6-8 tbsp powdered sugar

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Set aside.
  • In a large mixing bowl, cream together the vegan butter and 1/2 cup powdered sugar until smooth and fluffy, about 2 minutes.
  • Add the almond extract and vanilla to the bowl, then cream for another 30 seconds.
  • Mix in the flour, pecans, and salt until a thick, smooth dough forms.
  • Scoop out 1 tablespoon of dough at a time, roll into balls, and place on the baking sheet 2 inches apart.
  • Bake for 12-13 minutes until golden on the bottom edges.
  • Cool for 5 minutes, roll in powdered sugar, and let cool completely. Roll in sugar again for a final coat.
