Turkey, Pea And Carrot Rice Soup is a simple, wholesome soup made with tender turkey, vegetables, and rice simmered in a savory broth, ideal for easy family dinners and cozy nights.

Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 celery stalks diced
  • 1 cup cooked turkey shredded
  • 1 cup frozen peas
  • ½ cup uncooked white or brown rice
  • 6 cups turkey or chicken broth
  • 1 tsp thyme
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Instructions
 

  • Sauté onion, carrots, and celery in olive oil over medium heat for about 5 minutes until softened, then add garlic and cook 1 minute more.
  • Add broth, rice, and thyme, bring to a gentle boil, then reduce heat, cover, and simmer until rice is tender, stirring occasionally.
  • Stir in shredded turkey and peas, then simmer uncovered for about 5 minutes until heated through.
