Lay bacon slices vertically and horizontally to make a lattice. Season lightly and set aside.

Place beef rectangle on bacon lattice and roll tightly. Secure edges if needed.
Bake or grill at 375°F for 45–55 minutes until 160°F inside. Rest 10 minutes.
Caramelize onions and toast sandwich rolls. Slice bacon roll into thick rounds.
Assemble sandwiches with barbecue sauce, bacon explosion slices, provolone, onions, lettuce, and tomato.
